Anyone know any breakfast recipes that make just enough food for one person?

I want to make breakfast for just me. my family isn't home and i dont want to make just eggs or cereal. so does anyone have a recipe for pancakes for one or any other recipes just for one. please no comments about what i could do . please just recipes or websites i could go to get recipes

    French toast: Mix one egg,vanilla,granulated sugar. Dip two slices of bread and fry. Enjoy with syrup and OJ.

    Have you looked at the pancake box? It shows how much to use to make 3-4 pancakes. Why do you need recipes? Just throw some stuff together it's just you! What are you wanting to do make a casserole just for yourself? A cinnamon bun recipe that makes one or two? Get real!

    ditto on the french toast, but add a little cinnamon to the egg mix and nutmeg if you have it.

    pancakes

    4 cups flour
    6 tbs baking power
    2 tsp salt
    1 cup sugar
    4 cups milk
    1-2 cup melted butter

    mix dry ingredients together. add wet ingredients, whisk
    well. make pancakes the size you want.

    Here are a few things I like:
    Home made "Egg McMuffin" – scrambled egg, cheese, bacon or sausage stuffed inside a toasted English muffin

    Breakfast parfait – layer yogurt, fruit, and granola or nuts

    Smoothie – fruit, milk or yogurt, ice cubes all blended together

    Breakfast Burrito – scrambled eggs with peppers and onions, cheese, and salsa wrapped in a warmed tortilla

    Quick French Toast :
    1 egg
    3/4 cup milk
    1 tablespoon ground cinnamon
    1 teaspoon vanilla extract
    2 slices bread (the thicker the better)

    Beat together egg, milk, cinnamon, and vanilla.
    Heat a skillet or griddle over medium heat.
    Soak bread slices in egg mixture for 20 second on each side. Cook bread in skillet until both sides are lightly browned and crisp. Dust with confectioners sugar or serve with syrup.

    Mediterranean Eggs…

    2 eggs whipped with some milk (use egg beaters for a healthier alternative)
    1/2 tomato diced
    1/2 cup spinach
    2 Tbs Feta cheese
    Salt/pepper to taste
    1 piece whole wheat toast

    Scramble the eggs the usual way.

    Just before the eggs are completely cooked (still runny a bit) add the tomatoes, and the spinach.

    Continue to cook until the tomatoes heat up, and the spinach wilts.

    Serve over a piece of whole wheat toast, sprinkle on the feta cheese, and salt/pepper to taste.

    To make this even healthier – ad a tablespoon or two of flax seed to the egg mixture before cooking. The flax seed will add a lot of fiber, and also a nutty taste.

    Oatmeal for one

    Dice a small apple. Place in a microwavable bowl. Add a dash of cinnamon. Cook for 90 seconds. Add 1/3 cup quick oatmeal (not instant) and 2/3 cup water and a dash of salt. Cook for another 90 seconds. Stir. Let stand for a couple minutes. Add your brown sugar and milk if you like. Enjoy!

    Denny's-Style French Toast

    2 servings 22 min 10 min prep

    4 eggs
    2/3 cup whole milk
    1/3 cup flour
    1/3 cup sugar
    1/2 teaspoon vanilla
    1/4 teaspoon salt
    1/8 teaspoon cinnamon
    6 slices Texas toast thick bread
    3 tablespoons butter
    powdered sugar
    butter
    syrup

    Mix together eggs, milk, flour, sugar, vanilla, salt& cinnamon.
    Heat a large skillet, or griddle.
    When hot, add 1 tablespoon butter.
    If butter smokes, your pan is too hot; turn down the heat.
    Drop each slice of bread into the batter for 30 seconds on each side.
    Let some of the batter drip off, then put in skillet.
    Cook each slice 1 1/2-2 minutes per side til each side is golden brown.
    Add more butter, if necessary, to cook all slices.
    To serve, put on plate, dust with powdered sugar& serve with butter& hot syrup.

    Fluffy Pancakes

    2-4 servings 8 pancakes 15 min 10 min prep

    1 1/4 cups all-purpose flour
    2 tablespoons sugar
    2 teaspoons baking powder
    3/4 teaspoon salt
    1 1/3 cups milk
    3 tablespoons vegetable oil
    1 egg

    Mix all dry ingredients together in a bowl (I use a 4 cup measuring cup).
    Mix milk, oil and egg in smaller bowl (I use 2 cup measuring cup).
    Mix liquid ingredients into dry ingredients.
    Make 4 inch pancakes in a medium heated non-stick pan or griddle or use a small amount of oil in regular pan.
    Cook until golden brown.
    Serve with butter and syrup or your favorite topping.
