    I just now tested a batch using 2% milk and Smart Balance for the butter. It turned out well, not as creamy or thick as the sauce with whipping cream (I have made it with half & half with success) and it has a wonderful dark chocolate flavor. The mouth feel is not as silky, either. I will let you know how/if it sets up as nicely in the frig as the one made with whipping cream.
