Happy Accidents In My Kitchen or “I Meant To Do That”
Today was a slow cooker dinner. There was a half of a pork loin (seasoned, boneless, rib half. About 2 pounds) in the fridge, and I KNEW there would be no time to cook it. So, despite the summer heat, out came the slow cooker from under the cupboard.
After plopping the pork (fat side up) into the cooker, I went through the cupboards to try and guess something together.
A packet of onion soup mix. A sprinkle of pepper. About 3/4 cup of barbeque sauce. (4 noisy squirts, zig zagged across the top of the meat. I’m completely guessing at this point.) A cup of water. A prayer. Our day continues.
At the end of the day, I peek into the cooker. Looks Ok. Smells Ok. Must be OK. The kids are getting restless, and I hope this will work.
Out the meat comes to sit on the cutting board while I pour the liquid into a pot. Slice the meat thin as possible, and drape it lovingly on a fancy hamburger bun.
When the liquid in the pot boils, I add some flour mixed in water to make gravy. Then plunk plunk plunk on the meat, add a side of salad, and I present the plates to the family.
Silence.
Because they are eating it up, slopping up the gravy, and asking for seconds.
Yeah. I meant to do that.

Nothing like meat cooked in a slow cooker. Tender and juicy everytime. Great article regards Suzanne
Wow so good a 5yr old cleaned there plate, that is high praise (mother of twin 7yr olds)! It does sound delicious.
WOW Lori… I would have had to take the pork loin out before lunch to un-thaw… but then again I never think about using the slow-cooker! Duh.
Great, and fast recipe, a next-time-for-dinner try!
I’m coming over for dinner! Do you do desserts too? Oh and I don’t do dishes.
I love your writing style, and Measurements -”4 loud squirts”.
