   most counties have a food handlers class where you can obtain a certificate, in the class they teach you all about cross-contamination, nothing they’re doing in this video is cross-contaminating, in fact, the scrapings at the bottom of the pan will add tons of concentrated flavor

    Once the pork is fully cooked and the pan is still hot, theres no need to worry about contamination. The other reason not to wash the pan first is to get the flavor from the pork that was cooked in it before into the sauce.
