Recipe – Honeycomb
Well the school holidays are not too far away and it’s always good to find a fun snack to make even if you do not have kids and just a sweet tooth. This ones not for those who cannot or should not have sugar.
Ingredients:
6 tablespoons white sugar
2 tablespoons golden syrup
2 teaspoons water
1 teaspoon bicarbonate of soda
Method:
Pour sugar, golden syrup and water in a heavy saucepan and stir over a gentle heat until the sugar is dissolved.
Bring to the boil and then boil for seven minutes, remove from the heat and quickly add the bicarbonate of soda which will at this point make the mixture will froth dramatically.
Stir quickly and pour into a greased 28x18cm lamington tin.
After about 20 minutes and when the mixture is cool, mark into pieces with a sharp knife (you do not have to go all the way through nor be technically square).
When cold, break into pieces and wrap in cellophane ready for use.
If making a few days in advance, make sure you store in an air tight jar, it will last 1-2 days before it begins to soften.
I highly recommend this to dress up ice cream or cover with melted chocolate. It’s even better if you can access a chocolate fountain.
