Tricks of the Trade: How to make frying a pleasant experience

Fried food is totally welcome in our home, as long as it is made at home and not bought at a fast food chain. It seems contradictory to eat a meal , like the picture above, fried fish and potato vinaigrette when clearly the fish could be made in a much more healthy way as to accompany this low fat salad. I am are of all that but to be honest I am more concerned about taste than calories and sometimes you just need to fry those polentas, or the chicken, or the fish. I’m not proposing you go as far as doing this…

but I am suggesting that you not be so afraid of trying to fry things at home. Three indispenible things that I have learned in my frying years are

  1. The oil MUST be hot before you can deep fry anything.To make sure the oil is hot enough you throw a match inside the pan. Leave the match in the pan with the oil until the match lights up. Once that happens you know your oil is ready to d it’s job.
  2. No one likes their house to smell like a fast food restaurant. When you are frying something try to have as many windows open as possible. Unfortunately I have really poor ventilation in my kitchen. I learned that if I have a small pan with orange peels and water that is boiling the whole time I am frying I get a house that smell like orange and not like a donut shop.
  3. Before you put the oil in the pan make sure you add little bit of salt to the bottom of the pan. The salt helps make the oil not splatter everywhere when you are deep frying

    We don’t eat much in the way of fried foods, but I hadn’t heard of the salt trick. So, I’ll have to try that next time we get the frier out. Thanks!

    I don’t deep fry often, but sometimes I just have to make my own tortilla chips. I’m definitely going to try the match AND the salt!
    So, you really think deep-fried Twinkies would be excessive? You’re probably right. Sigh.

    We don’t eat a lot of fried food either, but there are times when life just needs it. I will have to try the salt…thanks for the tip.
