Can anyone give me a link/s to a website that has low gi and gluten free recipes that are good for a low gi ?

Potatoes, brown rice, corn and legumes (peas, beans, lentils) are good bases for building a low gi meal.

So you could do a one-pot rice meal (the sort of thing which is traditional in cultures across the world). For example, put into a large saucepan 1 cup of brown rice, 2 cups of water plus a dash, a little olive oil, chopped vegetables (including finely chopped carrot, sliced leeks, mushrooms), some diced chicken or ham or salami or whatever you've got (chicken can be raw, other meats should be cooked) 1-2 finely chopped cloves of garlic, seasoning to taste and a gluten free stock cube. Stick the lid on, bring to a boil then turn the heat down to the lowest possible (i use the smallest ring on the cooker). Check it every 10-15 minutes to see if there's any liquid left – push the rice aside so you can see the bottom of the pan. If there is, it's not cooked. This will serve 2-3 people, or can be zapped in the microwave on the next day if you are on your own.

If you want to spice it up a bit, you can omit most of the veggies from the rice and make a nice hot veggie curry to go with it in about 20 minutes: Cut your mixed veg into pieces about 1.1/2 inches (3-4cm) and put in a pan with a couple of US cups (500ml) of salted water. Bring to a boil and simmer for 10 minutes. Drain, retaining the liquid. Fry a chopped onion and a finely chopped clove of garlic in a little oil with a teaspoon of garam marsala and 1-4 finely chopped chilli peppers (depending on the heat of the chillis, how hot you like it, and whether you take the seeds out or not) until onions are soft. Stir in a level tablespoon of rice flour and the reserved liquid, along with a gluten free stock cube. Keep stirring with a whisk till it gets thick; taste and adjust seasoning, then add in the cooked veg and reheat.

I don't know if this has been any help, and I'm sitting here thinking "is this a good answer" but it's the best i've got, sorry.
