What don't you use?

Any comments?

I guess I could have put this question in the Cooking section too. Oh well!

My father-in-law, a well respected doctor, was such a sucker for infomercial gadgets! My mother-in-law never knew what the next package would contain because he would stay up late and order the stuff while she was asleep. He bought the salad shooter, glass magic wand, pole extension for dusting and painting, pasta draining pot, any miracle cleaner they advertised, veggie mandoline cutter, ginsu knives, garlic peeler and dicer, jar opener, the screw extractor, some talking fish and turkey, miracle tarnish proof felt jackets for silver, plastic container organizers, flow-be, pizza heater, mini chopper/blender/grinder, salad spinner, a pan that is split and cook 2 different things at once, the original laser stud finder and level, and those are only the ones I can think of off of the top of my head.

I can say, we used to get his cast-offs and some really did work. Still in use are the salad spinner, laser level, pole extender, screw extractor, tarnish proof jackets for silver.

He passed away, thanks for a great memory of a wonderful person. We used to make fun of him for his "infomercial addiction", now it is a fond memory.

I need something to cook for dinner, and we want chinese. Preferably something with chicken or ground beef.

< <<<<<<<< Stir-fired chili beef >>>>>> Serves 4

500g shredded beef tenderloin
2 tablespoon cornstarch
1 cup of oil for frying
half carrot, shredded
1 tablespoon white sesame (roasted)
2 gloves of garlic, finely chopped
1/5 teaspoon hot bean paste
1/5 teaspoon sweet bean paste (hoisin sauce)
2 fresh chili (or a few dried ones) seeded, shredded
1 teaspoon soy sauce
1 tablespoon cooking wine
1/3 teaspoon Szechuan peppercorn powder
a few drops of sesame oil

Marinade (for the beef)
1 teaspoon of soy sauce
1 teaspoon of ginger powder
a pinch of salt
1 tablespoon of cooking wine
1/2 teaspoon of sugar
1 teaspoon of cornstarch
1/3 teaspoon of cooking oil

1) Marinate shredded beef for about 20 minutes then drain the beef and sift the cornstarch to coat the beef (this helps to seal the juice when deep frying the beef and keeps it crispy)
2) Mix soy sauce, hot bean paste, sweet bean paste (hoisin sauce)
and Szechuan peppercorn powder in a bowl, set aside
3) Heat the wok then add cooking oil over medium heat (test the temp. by putting the chopstick in the oil, when you see bubble sticking on the stick, that means the oil is hot enough), deep-fry the beef for 2 minutes (or just half cooked), drain well and set aside
4) Heat wok over high heat, add 2 tablespoons of cooking oil, stir-fry garlic and chili quickly till fragrant, add shredded carrot, stir-fry for a minute, add cooking wine and continue to stir fry until tender.
5) Add beef and the hot paste, soy sauce mixture into the wok, stir fried quickly till beef is fully cooked, turn off heat, try the taste.
6) Sprinkle sesame oil to make the food shiny, serve on plate then add garnish with sesame seed.
7) Serve hot with steamed rice

P.S. You may add some celery or onion in this recipe (but dont over cook the vegetables)

This wonderful tomato soup recipe comes from the Bistro Jeanty restaurant in Yountville, California. It’s one of many fantastic restaurant recipes in Napa Valley.

You will need 2 1/2 lbs ripe/juicy tomatoes, 1/2 cup butter, 1/2 pound of onion, 6 garlic cloves, 1/4 c of tomato paste, 1 bay leaf, 1/2 Tb. pepper corns, 1 tsp. thyme, 4 cups heavy cream, 1 tbsp butter. Salt to taste, 1/2 tsp white pepper, 1 lb. puff pastry, 1 egg.

Procedure:

Melt the ½ cup butter in a large stockpot over medium-low heat. Add the onions, garlic, thyme,
bay leaf and peppercorns; cover and cook for about 5 minutes. Do not let the onions color. Add
tomato paste and lightly “toast” the tomato paste to cook out the raw flavor the add tomatoes,
and water if needed. Simmer over low heat for 30-40 minutes, until the tomatoes and onions are very soft and broken down. Puree by passing through a food mill. A food mill works best however you may use a blender in batches or a handheld immersion blender until finished, the strain. Return the soup o the pot. Add the cream, salt, white pepper and remaining butter to taste. Bring soup to a simmer then remove from heat. Allow the soup to cool for two hours or overnight – in the refrigerator.
Divide the soup among six 8-ounce soup cups or bowls. Roll out the puff pastry to 1/4 inch. Cut into 6 rounds slightly larger than your cups. Paint the dough with the egg wash and turn the circles, egg wash side down, over the tops of the cups, pulling lightly on the sides to make the
dough somewhat tight like a drum. Try not to allow the dough to touch the soup. These may be made up to 24 hours in advance and covered with plastic in the refrigerator. Preheat oven to 450 degrees. Lightly paint the top of the dough rounds with egg wash with out pushing the dough down. Bake for 10-15 minutes, until the dough is golden brown. Do not open the oven in the first several
minutes of cooking as the dough may fall. Serve immediately.
