Brr. I. Am. So. Chilled!<br />
I just got back from running errands, and while I may have been inside most of the time, that wind chills you right to the bone the second you step into it! That, and, one errand involved Price Chopper&#8230;and it is always freezing in there. Makes sense, I guess.<br />
You would think, however, that with my heart-warming [pun intended] breakfast, I would have stayed warm and fuzzy regardless!</p>

<p>Yeah, I made myself a Valentine&#8217;s Day breakfast a week early. What of it?</p>

<p>There&#8217;s something amazing about waking up early on the weekends. I don&#8217;t think I&#8217;m a real college student. How many college kids say that?<br />
I really hate sleeping in. During the week, I don&#8217;t bound out of bed at 6:00 to go to work, but it&#8217;s not a problem, either. On the weekends, however, I&#8217;ll gladly wake up at 6 or 7, and just leisurely go about starting my day. And I love doing something  a little different for breakfast on the weekends!</p>

<p>So maybe this Almond Butter &#038; Banana Stuffed French Toast isn&#8217;t that unique to most, I&#8217;ve never had stuffed French Toast before. And mind you, yesterday was my first grilled almond butter and banana experience.<br />
And oh, this was delicious. I realize now that my food presentation needs work but hey &#8211; I do what I can. It&#8217;s sort of sad to think about myself making such a love-themed breakfast for myself, but again. Oh well. haha. At least my mom came back from her haircut in time to give me a funny look. She&#8217;s not a &#8220;breakfast person,&#8221; so unfortunately I can never treat her to breakfast&#8230;</p>

<p>But! Just because I am a relatively sad excuse for a college student, doesn&#8217;t mean you are &#8211; and maybe you want to treat your honey to a heart-healthy shmalentine&#8217;s day brekkie?<br />
Because I think you should.<br />
Of course you all know how to make French Toast. I won&#8217;t go into those details. But here&#8217;s just some added fun-stuff I did!</p>
<p>For the Stuffed French Toast<br />
 2 slices of this amazing Organic Spelt bread by the Vermont Bread Company [okay, okay. you can use any bread. But this is GOOD Spelt bread!]<br />
1 T. All-Natural Almond Butter<br />
1 Banana<br />
2 Eggs [if you are an egg-beaters user...PLEASE use at least one real egg white! I like egg beaters and all - but when it comes to French Toast, it's just not the same!]<br />
3 T. Almond Milk<br />
1/8 t. Cinnamon<br />
1/8 t. Nutmeg<br />
Dash ground cloves<br />
1 t. Vanilla<br />
1/2 t. Wheat Germ<br />
1/2 t. Chia Seeds</p>
<p>Spread 1 teaspoon almond butter on one side of each piece of bread (if you&#8217;re going to make a pretty heart shape, do that first of course) and arrange your banana slices on one side &#8211; I used half on the sandwich, half to garnish. Sandwich together and poke outsides a couple times with a fork.</p>
<p>Whisk together eggs, milk, spices, vanilla, and wheat germ. Place sandwich in mixture and begin preheating a non-stick, sprayed pan. Allow sandwich to soak a minute before flipping, poking both sides again with your fork.</p>
<p>Sprinkle Chia seeds over outside of bread and cook until golden on both sides.</p>
<p>For the Pumpkin &#8220;Sauce&#8221;<br />
1/4 c. Plain Greek Yogurt<br />
1/8 c. Pure Pumpkin Puree<br />
1/8 t. cinnamon<br />
1/8 t. nutmeg<br />
 2 t. Maple Syrup<br />
1 t. Chia Seeds</p>
<p>Stir together and plate with French Toast, along with remaining banana and almond butter, and cute little apple heart! [p.s. apple = amazing dipped in this.]</p>

<br />I dont live in a country where they label food lunch, breakfast and dinner.  However if you live in a country like that, it is done for people who cannot think for themselves and require media to tell them what they require and where to spend their money, rather than living and learning about real nutrition and food identification and preparation.</p>
<p>In the morning eat some food classified as carbohydrates to give you energy for the first half of the day.  This will keep you going evenly during the morning.  Examples are grains, wheat, rice, oats; &#8211; pasta. &#8212; so eat cereal, preferably not stuff with tony tiger or other pretty animals on the box.  Eat rice to be sure your not eating high processed corporate food.  Try oatmeal, unsugared wheat or corn flakes.   Put some fruit on them &#8211; chopped up &#8211; banana, apples, strawberries, anything etc</p>
<p>Boil some rice in hot water for about 15 minutes until its soft, then throw in a few teaspoons of soysauce and sme left over meat from the night before and some veges &#8211; like peas and corn.</p>
<p>At noon you should have your main meal fr the day.   Have a steak or chicken or pork  or lamb, pan fried, bbq, roasted or boiled in a soup.   Eat this with chopped up real veges from the market like carrots, corn, peas, spinach, brussels, cabbage, squash, or whatever is in season in your area of the world.</p>
<p>In the late afternoon, have a smaller meal, some sandwiches etc with the leftovers from midday, if you have any.  It only has to keep you going while you laze about before bed.</p>
<p>Remember more food in morning an arvo, and less in the evening, and don&#39;t by preprepared food, that come in boxes that only require you to add water and eat.</p>

<br />Spanish Potato Omelet</p>
<p>* 1/2 cup olive oil<br />

<p>DIRECTIONS</p>
<p>1. In a large frying pan or skillet, heat olive oil over medium-high heat. Sprinkle potatoes lightly with salt and pepper. Cook until golden brown and crisp.<br />
2. Once the potatoes are golden, stir in the onions. Cook, stirring occasionally, until onions soften and begin to brown.<br />
3. Meanwhile, beat eggs together with salt and pepper. Pour eggs into pan and stir gently to combine. Reduce heat to low and cook until eggs begin to brown on the bottom.<br />
4. Loosen bottom of omelet with a spatula, invert a large plate over the pan, and carefully turn the omelet out onto it. Slide the omelet back into the pan with the uncooked side down. Cook until eggs are set. Garnish omelet with tomato and green onion and serve warm.</p>

My mornings are usually pretty busy, and I generally don&#39;t have time to make a big breakfast (ie: eggs, bacon, pancakes). Besides, I get tired of eating the same breakfast foods every morning. Don&#39;t get me wrong&#8230;I love eggs and bacon. It&#39;s just a pain to make all that on a school morning, and I usually tend to get hungry not long after. So, I usually end up running through McDonalds drive-thru. I&#39;m unbelievably sick of that, as well. </p>
<p>So, what I&#39;m wondering is if anyone has any relatively healthy, quick and filling recipes for breakfast besides the same-ole-same-ole. No oatmeal or scrambled-egg sandwiches, please. Gimme some p&#39;zaz to start the day off (and make it snappy, plz, mmmk, thks) *grin*<br />
<br />Since you want something quick different from the norm, I&#39;m assuming you don&#39;t feel like making something the night before.</p>
<p>As far as something filling, you need specialized protiens.  THe stuff most people think of as a normal breakfast is mostly starches.  They are mostly sugar and tend to burn up quickly, which means you burn out.  Honestly, when I was having this problem, I just bought some of the Slim Fast Optima shakes, and one would at least hold me until lunch.</p>
<p>If you want an easy recipe, here&#39;s the best I can offer, though it is a bit plain.</p>
<p>Wheat Bread, Lettuce, Tomato, sausage, and cheese.</p>
<p>Just toast the bread (You can spread mayo if you want.)<br />
One leaf of lettuce, one tomato slice.<br />
Use ground sausage, (usually comes in a tube of some sort)<br />
Sqeeze out the desired amount of sausage and press into a thin patty.  (The thinner it is the quicker it cooks.)<br />
Cook the patty, lay a slice of your favorite cheese on top of the sausage to melt a little.<br />
Place on bread.</p>
<p>It&#39;s a great sandwich and you can change out the meat as you&#39;d like.</p>
<p>You could use ham slices, or make tuna salad with apple chunks instead of relish.<br />
You could also trade up the bread for a bagel once in a while.  I&#39;ve tried the sausage and cheese on a blueberry bagel once, and it was surprisingly good.</p>
<p>It&#39;s kind of basic, but if you keep sliced tomatoes in a container and already have a head of lettuce, there is almost no work involved in making it.  Plus it&#39;s surprisingly filling with a glass of milk or orange juice.  </p>
<p>It should stick with you for a little longer than a bowl of cereal or some other sugar based item.</p>

1/2 teaspoon salt<br />
1 large egg<br />
2/3 cup milk<br />
1/2 cup applesauce<br />
2 tablespoon vegetable oil<br />
1/2 cup finely chopped walnuts<br />
Stir together flour, oats, sugar, baking powder, cinnamon, and salt in mixing bowl.<br />
Beat egg in separate bowl; stir in milk, applesauce, and oil.<br />
Add liquid mixture to dry ingredients, stirring just until blended. Fold in walnuts.<br />
Heat greased griddle or skillet over medium heat or to 375*F (190*C). Griddle is ready when a few drops of water bubble and skitter rapidly around.<br />
For each pancake, pour scant 1/4 cup batter onto hot griddle. Cook pancakes until puffed, bubbly and dry around edges. Turn and cook other sides until golden brown.<br />
Makes about 10 (4-inch) pancakes.</p>

PREPARATION:<br />
Into a medium bowl, sift together the flour, baking powder, and salt. Cut in butter with a pastry blender or knives until mixture is fine, even crumb. Add milk and stir just until dry ingredients are moistened. Turn dough out onto a lightly floured surface and knead about 10 times, until a smooth ball is formed. Roll out dough to a rectangle about 10&#215;16 inches. In a small bowl, combine orange marmalade, raisins, and pecans. Spread evenly over the dough; roll up as for a jelly roll, starting at long edge. Cut roll into 10 slices. Place slices, cut side down, in a generously buttered 9-inch round layer cake pan. Bake at 400° for 30 to 35 minutes, or until lightly browned. Serve warm.<br />
Makes 10 orange marmalade buns. </p>
<p>Tomato Bagel Sandwich</p>
<p>1 bagel &#8212; split and toasted<br />
2 tablespoons cream cheese<br />
1 tomato &#8212; thinly sliced<br />
salt and pepper to taste<br />
3 fresh basil leaves<br />
Spread cream cheese on bagel halves. Top cream cheese with tomato slices. Sprinkle with salt and pepper. Top with fresh basil leaves.</p>
