Corn Casserole – a Taste of Chi-Chi’s

Chi-Chi’s, a popular Mexican restaurant, would serve a delicious vegetable side dish called Corn Pudding.  It has the consistency of a soft bread pudding, laced with pieces of corn.  It is a wonderful addition to any meal, and is a family favorite at holiday time, especially when served with beef or pork.
