<p>About Chef Mark Best:<br />
Embarking on his culinary path in 1990, Best opened his own restaurant five years later to rave reviews and a loyal following. Despite such strong recognition for his talents, Best decided to further his study of French cuisine at its birthplace, France. Working at legendary restaurants like Alain Passards L&#8217;Arpège and Raymond Blanc&#8217;s &#8220;Le Manoir Aux Quatre Saisons&#8221; in UK, he concluded his experiences and opened Marque.</p>
<p>Like his previous restaurant, Marque took the Australian culinary community by storm when it opened. It received a 19/20 rating from the Sydney Morning Herald&#8217;s Good Food Guide, was named Restaurant of the Year and Best himself was crowned Chef of the Year, all in 2006. His fame now spreads beyond Australia&#8217;s borders to culinary capitals in New York, where New York Times calls Best&#8217;s food &#8220;possibly the best food in Australia&#8221;.</p>

Saccos talent is undisputed as he brought about Piccolo Lago (his family restaurant) its first Michelinstar in 2004 and was awarded his second Michelin-star in 2007. He is also one of the founding members of a team of Michelin-starred-chefs from the region whose mission is to introduce their gastronomic heritage to the world.   </p>

			<content:encoded><![CDATA[<p><img src="http://i.ytimg.com/vi/38rZgYSSZQg/2.jpg" align="left"/>The second of the Eating Global Vancouver student film series, this film concentrates on the Moon family and their Korean restaurant chain, Jang Mo Jib. Through interviews with the father and daughter, we see different generations of a family-run business, and get rare behind the scenes interviews at the factory where kimchi, BBQ beef, and bone soup is prepared for the restaurants. Featuring a blend of authentic Korean dishes appealing to a variety of Chinese, Japanese, Korean, and non-Asian customers, Jang Mo Jib reveals the challenge of family restaurants in Vancouver.<br />
This film series grew out of one of our most popular classroom projects, in which students form groups and choose to research one of the myriad of restaurants that make Vancouver such a wonderful city for eating. Creating websites that feature interviews with the families (almost invariably global migrants to Vancouver) who run the restaurant, as well as in depth explorations of the restaurants themselves as sites of community interaction, our students combine ethnography with historical research in the Vancouver archives to create a rich portrait of each restaurant as a microcosm of Global Vancouver. Revealing the history of the restaurant&#8217;s location through Vancouver history and the changing demographics of its neighborhood, these research projects lead us to see in a new light the restaurants at which we eat.<br />
