I am enjoying your videos a lot, and they are helping me as I am a student and even though my dad is a crazy good cook (he loves it as a hobby) im not very good at it. The sauce looked too watery for my liking, but the chicken looked good. My dad nearly always adds wine to his sauces.

    Why are you being …
Why are you being so obsessive about the fat? The skin doesn’t just hold fat, it also holds almost all of the flavor. But I think it’s great that you are trying to get people into cooking.

    what i dont …
what i dont understand is if you comment on the video with some useful tips people think your being condesending and that you think your an expert. I clearly don’t think that but I understand flavour and if you look at any traditional indian curry recipies you will see which flavours they use,and it isnt sage, tarragon, thyme e.t.c

Actually, In most countries of origin, chicken leg is perefered over breast therefore more authentic.
Chicken breast is for the inexperienced cook who’s too lazy to cut out the collagen from leg pieces.
