I used to make parfaits for my daughters the night before: I'd layer fruit yogurt with granola (several layers of each) in parfait glasses and refrigerate…..

    Try "Gas House Eggs"!

Take a piece of bread, cut a hold out of the middle….
Put the bread in a frying pan with a little butter melted and toast one side (slightly), then flip it over and crack an egg into the hole. Cook for 2 minutes, then flip it over and cook through until the egg is as runny (or not) as you like it. Sprinkle with some salt and pepper. The taste is a buttered toast and egg combination that 'rocks'. (Note: Toast the hole too, it's yummy and fun to eat on it's own.)

This is one of my kid's favorite breakfasts! Enjoy!

Cinnamon-Toast: spread soft butter (leave out overnight) on a couple slices of bread, then sprinkle w/ cinnamon sugar (3 Tbsp. sugar + 3 tsp. cinnamon) and run in the reg. oven on 450ºF for about 5-6 min or the toaster oven on a "toast" cycle or two.

Cheesy Eggs: Scramble up 2 eggs. Pour into heated nonstick pan, scrape with heat-proof silicone spatula, then throw in a couple slices of cheese, torn into bits, and keep scrambling. (the cheese that is individually wrapped melts best). When it's all no longer runny, scrape out onto your plate, season w/ s&p i fyou like, and enjoy.

Yogurt + fresh fruit + granola for crunch
